Fruit Crumble

Peach and blueberry season!  Simple, delicious, and flavored by sun-kissed fruit, a berry crumble drizzled with yogurt is a great dessert choice.  Hooray for good, clean eating.

Peach Blueberry Crumble

2 cups blueberries
4-6 peaches, sliced
Toss the fruit with ¼ cup oat or brown rice flour and 2 Tbsp maple syrup or liquid honey.  Add a dash of cinnamon and a splash of vanilla.
Pour into an 8×10 inch baking dish

Topping:

1 cup ground oats
1 Tbsp coconut oil
1/2 cup oat or brown rice flour
1/4 cup unsweetened apple sauce mixed 2 Tbsp maple syrup or liquid honey
dash of cinnamon
Mix all the topping ingredients together, making sure they are well blended.  If it seems too dry, add a splash of milk.  Pat into a layer on top of the berries and peaches.  Bake at 350 for 20-25 minutes or until the fruit is tender and bubbling up through a golden brown top.
