Devilish Brownie Bites


They should be evil, but they aren’t.  These brownies are delicious, moist, chocolatey and decadent.  And healthy!  Yes they are still a dessert, but they don’t have refined sugar or flour in them, they are gluten-free and did I mention delicious?

Devilish Brownies

1 cup date puree*
2 eggs
3/4 cup milk (you can use almond or rice milk in place of cows milk)
1/2 cup melted coconut oil
2 tsp vanilla

Since you are using coconut oil, make sure your eggs and milk are room temperature (or the oil will harden).  You can also measure out the date paste while it is warm, add the oil to it and then mix in the other liquid ingredients.  Whisk all of the liquid ingredients until well blended.  Set aside.
*Date Puree: put cooking dates into a pot, cover with water, and bring to a boil.  Let simmer 5-10 minutes and then turn the pot  off.  Let them soak like that for 20 minutes.  When they are soft, blend with a hand blender or food processor.

1 cup almond flour (or almond meal)
1/2 cup oat flour (or buckwheat also works for true gluten-free goodness)
1 1/4 cup dark cocoa powder
2 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon (this is the top-secret ingredient, please don’t skip it)

Whisk dry ingredients.  Add wet to dry, mixing until blended but without over stirring.   Pour into muffin cups, bake at 350 for approx 12-13 minutes.  A toothpick inserted into the centre should come out relatively clean, but with a little batter stuck to it (this will give you the gooeyness).  Let cool 3-5 minutes in the pan, then transfer to wire cooling racks and cool completely.  Makes about a dozen, maybe more.
