Confessions of a Kale Hater


Ok, so I actually do love kale.  I really do.  Though to be completely honest, it’s the idea of kale that I love.  Who wouldn’t?  It’s magic, full of superpowers, and does all kind of wonderful things for you.  It is a super-food.  So why is it that every time I buy some, I use a little and then let the rest spoil in the fridge until I can compost it?

My mission this week was to make as many kale-inspired dishes as I could from one bunch of beautiful, perfect kale we bought at the farmers market (for $3).  I know many people love their green smoothies or green juices, and sometimes a side of sautéed greens is lovely.  But sometimes it tastes like I’m eating dirt.  And that isn’t lovely.  Plus, I am trying to make meals that our 14 month old son will also enjoy – benefits of kale goodness included.

Here’s what we came up with:

Green Eggs (Dr. Zeus inspired, sautéed kale scrambled eggs)

Kale Hummus (Mateo scooped this up and licked it off his hands)

Kale Salad Rolls

Kale and Basil Pesto (Seriously the best pesto I have ever had. Ever!)
