Amazing Kale and Basil Pesto

Kale and Basil Pesto. This honestly astounded me.  I swear to you it is the best pesto I have ever had.  There are no words.

Kale and Basil Pesto

4 cups kale, stems removed, coarsely chopped
4 cups washed basil leaves
1/2 cup dry roasted almonds
1/2 Parmesan cheese
1/4 cup extra virgin olive oil
1 Tbsp lemon juice
3 cloves garlic
1 tsp salt

Put all the ingredients into the blender.  Blend until a fairly smooth consistency, without letting it become pulverized. Add fresh ground pepper and toss with pasta or zucchini noodles.

Zucchini Noodles

One large zucchini or two medium-sized zucchini.  One julienne peeler (yes such a thing exists and it is fabulous).  “Peel” the zucchini into long noodles, saute a few minutes with olive oil and enjoy!
